Chocolate cake is one of my favorite things in this world. Who doesn’t love a warm slice of fluffy chocolate cake with the perfect frosting? I mean, come one, its hard to resist. I decided to take it up a notch with silky chocolate butter cream and smooth chocolate ganache. Yes, I know this sounds like a lot of cocoa, but have no fear, it’s perfect.Jump to Recipe
This is the simplest, one-bowl chocolate cake recipe you’ll find. Boxed cake mix cannot hold a candle to this recipe! Not even the organic ones! I love a good box cake just as much as everyone else but there’s something special about making your own cake. Not to mention, baking from scratch gives you control over the quality of ingredients going in your cake. When you bake you bake from scratch, you allow special chemical processes to happen between the ingredients. Basically magic. This is the type of magic that makes you famous among friends and family.
The secret to the best chocolate cake is adding boiling water to the batter after you’ve mixed all your ingredients. I’m sure you’re wondering why. Hot water is easily absorbed by the ingredients and it helps to break down the molecules faster by dissolving them.
Ganache sounds super fancy but it is not. It is a 1:1 mixture of warm cream pored over chocolate. Then to ensure a smooth texture it is whisked until the chocolate is smooth and silky. It is quick, simple and easy to make. Ganache can be used as a dip, spread, filling, frosting or topping.
If you do not heavy cream you can use heavy whipping cream or whole milk and butter. Basically, you need fat. Choose a nice grade of chocolate and either chop it up into small pieces or use chocolate chips.
If you’re not a chocolate lover or in a decadent mood, you may want to skip the chocolate buttercream. You could also use less cocoa powder than the recipe suggests.
If you’d like to make this cake, but you’re vegan, here are a few substitutions I like to use. Here is a link for vegan chocolate buttercream.
For vegan ganache, use 8 oz. of vegan chocolate chips or vegan chocolate chopped into small pieces and 1 cup of vegan full fat coconut milk or cream.
If you do not have heavy cream or heavy whipping cream, use 1/2 cup of whole milk, 4 tablespoons of unsalted butter and 8oz, of chocolate.
