Easy Chocolate Cake with Ganache

Chocolate cake is one of my favorite things in this world. Who doesn’t love a warm slice of fluffy chocolate cake with the perfect frosting? I mean, come one, its hard to resist. I decided to take it up a notch with silky chocolate butter cream and smooth chocolate ganache. Yes, I know this sounds like a lot of cocoa, but have no fear, it’s perfect.

The Best Chocolate Cake Ever

This is the simplest, one-bowl chocolate cake recipe you’ll find. Boxed cake mix cannot hold a candle to this recipe! Not even the organic ones! I love a good box cake just as much as everyone else but there’s something special about making your own cake. Not to mention, baking from scratch gives you control over the quality of ingredients going in your cake. When you bake you bake from scratch, you allow special chemical processes to happen between the ingredients. Basically magic. This is the type of magic that makes you famous among friends and family.

Why Add Boiling Water to Chocolate Cake Mix?

The secret to the best chocolate cake is adding boiling water to the batter after you’ve mixed all your ingredients. I’m sure you’re wondering why. Hot water is easily absorbed by the ingredients and it helps to break down the molecules faster by dissolving them.

Chocolate Ganache Recipe

Ganache sounds super fancy but it is not. It is a 1:1 mixture of warm cream pored over chocolate. Then to ensure a smooth texture it is whisked until the chocolate is smooth and silky. It is quick, simple and easy to make. Ganache can be used as a dip, spread, filling, frosting or topping.

If you do not heavy cream you can use heavy whipping cream or whole milk and butter. Basically, you need fat. Choose a nice grade of chocolate and either chop it up into small pieces or use chocolate chips.

Chocolate Buttercream Ingredients

If you’re not a chocolate lover or in a decadent mood, you may want to skip the chocolate buttercream. You could also use less cocoa powder than the recipe suggests.

  • Butter
  • Cream Cheese
  • Powdered Sugar
  • Vanilla Extract
  • Cocoa Powder

Chocolate Ganache Ingredients

  • Semi-Sweet ingredients
  • Whole Milk, Heavy Cream, or Heavy Whipping Cream

Variations & Substitutions (Vegan- friendly)

If you’d like to make this cake, but you’re vegan, here are a few substitutions I like to use. Here is a link for vegan chocolate buttercream.

  • 1/4 cup of unsweetened applesauce per egg
  • 1 to 1 swap of dairy milk for non-dairy milk like almond or soy milk

Ganache Variations & Substitutions (Vegan- friendly)

For vegan ganache, use 8 oz. of vegan chocolate chips or vegan chocolate chopped into small pieces and 1 cup of vegan full fat coconut milk or cream.

If you do not have heavy cream or heavy whipping cream, use 1/2 cup of whole milk, 4 tablespoons of unsalted butter and 8oz, of chocolate.

Easy Chocolate Cake with Chocolate Ganache

A chocolate lovers dream, this chocolate cake is topped with fluffy chocolate buttercream and silky smooth chocolate ganache. No fancy equipment or technique needed, just a bowl and a little wristwork.

Ingredients

  • 2 cups white sugar I use raw sugar
  • 1 3/4 cups flour I use unbleached white flour from Bob's Red Mill
  • 1 1/2 tsps baking powder
  • 1 1/2 tsps baking powder
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsps vanilla extract
  • 1 cup boiling water

Chocolate Buttercream

  • 1 cup unsalted butter room temp
  • 3 1/2 cup powdered sugar sifted for smoothness
  • 1/2 cup cocoa powdered sugar sifted for smoothness
  • 3 tbsp heavy cream milk or non-dairy milk will do
  • 2 tsps vanilla extract

Chocolate Ganache

  • 8 oz semi-sweet chocolate finely chopped or chocolate chips
  • 1 cup heavy cream

Instructions

  • Preheat oven to 350° F. Prepare two 8" or 9" round pans.
  • In a large mixing bowl, mix sugar, flour, cocoa powder, baking powder, baking soda and salt.
  • Add wet ingredients: eggs, milk, oil and vanilla. Mix well.
  • Add boiling water to batter, carefully.
  • Pour into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean. Allow them to cool for 10 minutes in the pan, then flip them out on a wire rack and let completely cool before frosting.

Chocolate Buttercream

  • Whip room temp butter and cream chhese together until smooth, about 3- 4 minutes by mixer.
  • Add in sifted cocoa powder and sifted powdered sugar. Mix until well combined, about 3-4 minutes. Stop mixer at least once to scrap sides and the bottom of bowl.
  • Add vanilla extract and heavy cream. Mix until well combined and set aside.

Chocolate Ganache

  • Pour chocolate into heat safe bowl. Set aside.
  • Warm cream in a pot on medium heat. Do not boil.
  • Once you begin to see little bubbles in the cream (about 3-5 minutes of heating) remove cream from heat and pour over chocoalte. Stir constanlty, until the chocoalte and cream is well mixed and smooth.

Cake Assembly

  • Once cake has completely cooled, add a layer of chocolate buttercream between each layer of cake.
  • Cover the outside of the cake with buttercream as well.
  • Pour chocolate ganache over the entire cake. Top with strawberries or decorations and serve.
