Salmon cakes have been a part of my life for as long as I can remember. Growing up, I would randomly find my parents in the kitchen making traditional Louisiana salmon croquettes and chatting. I never really appreciated the complex deliciousness of them then but recently, I’ve fallen in love with these savory moist cakes. Here’s my recipe for salmon croquettes using canned salmon.

What is Salmon Croquettes Made of?

Depending on who you ask, you’ll get a different answer. Everyone’s mom, grandma, or dad has their own salmon cake recipe. However, they all have the same general ingredient list.

How to Make Salmon Croquettes

Making Louisiana salmon croquettes is a super simple thing to do. It’s a quick dish and a light meal or snack. Salmon cakes, like crab cakes, are often served here in Louisiana at restaurants as an appetizer. You can quickly whip these up easy salmon croquettes and serve them at home!

Step One- The first step is to open the can of salmon and drain the water. We don’t want the salmon cakes to be dry but that’s not the kind of moisture we’re looking for. After you’ve drained the salmon, pour it into a medium-sized bowl.

Step 2- Next add the flour, cornmeal, egg, Worcestershire sauce, red onions, and seasonings to the bowl. Then use a fork to combine the ingredients while breaking up any chunks of salmon. You want all the ingredients to be well combined.

Step 3- Add the mayo. Dijon mustard and fresh herbs to the bowl. This is where I use a spatula to fold everything together.

Step 4- Now it’s time to form the croquettes, but first I put the oil in the pan and heat the oil. I like to use a 1/4 cup measuring cup to scoop out equal amounts. Then I gently for a ball and press it into a patty.

Step 5- When the pan is hot and the oil is sizzling, I know it’s time to add the salmon croquettes. I cook them on medium for about 5 minutes or until it is golden brown then I flip them. After I flip them, I cook them for a few more minutes or until that side is golden brown.

Step 6– Serve and enjoy!

Ingredients

  • 4 tbsp flour
  • 3 tbsp cornmeal
  • 2 5 oz cans of Starkist Salmon Chunks
  • 1/4 cup red onions diced
  • 1 large egg
  • 1/2 tsp Worchestshire sauce
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 3 tbsp mayo
  • 1 tsp dijon mustard
  • 1 tbsp cilantro finely chopped
  • 2-3 tbsp oil for frying

Instructions

  • Open the can of Salmon and drain the water. Then place the salmon in a bowl.
  • Add all the ingredients to the bowl except the mayo, dijon, and cilantro. Then use a fork to combine the ingredients and break the salmon apart.
  • Add the mayo, dijon mustard, and cilantro to the bowl. Then use a spatula to fold everything together.
  • Add the oil to the pan and heat it on medium. Use a 1/4 cup measuring cup to scoop the patties. Roll the batter into a ball then gently flatten it.
  • Place the patties in the pan and cook for about 5 minutes or until it is golden brown. Then flip and cook the other side until it is golden brown. Do not overcook them becasue it will dry out.
