Vegan apple cake is one of my favorite cakes to make. This yummy vegan apple loaf is the perfect mixture of warm cinnamon, cloves, and nutmeg. I topped this yummy vegan cake with sweet caramel and pecans. This cake is holding a secret….it’s made with Bob’s Red Mill Organic Spelt Flour!
Spelt flour is ancient actually dinkel wheat or hulled wheat that has been used since about 500B.C. It has more protein and fewer calories than traditional all-purpose flour. This special flour is also a full spectrum of nutrients, including vitamin B2, manganese, niacin, copper, phosphorus, protein, and fiber.
Since spelt flour has a tougher outer husk than wheat, the nutrients and flavor is protected during the milling process. However, this does not mean that spelt flour is tough on the body. It is the exact opposite. The flour is water soluble and easier to digest than white flour.
How to Bake with Spelt Flour
Spelt can easily be used to replace all-purpose or white flour. Since it does contain gluten, cakes, and other baked goods will maintain their structure. (This is not a gluten-free vegan apple cake).
Spelt flour is water-soluble so you will not need as much liquid when baking with it. Try using 25% less liquid at first, then increase or decrease the liquid in the recipe from there.
For this vegan apple cake, I used a loaf pan, but it can easily become a vegan apple bundt cake. Loaf pans and bundt cake pans are perfect for spelt because it will help it the baked good maintain its structure and texture when baking.

How to Make Vegan Apple Cake
Preheat the oven to 350 degrees and prepare your pan.
Mix wet ingredients with sugar (coconut oil, apple cider vinegar, almond milk, unsweetened applesauce, sugar, and vanilla).
