Baking with whole wheat flour makes the finished product more flavorful and nutritious. However, using only whole wheat flour can make the final product a little drier. The texture and consistency may change. To combat this I like to add more moisture and fat. You can also give the mixture a rest before putting it in the oven. Whole wheat flour contains both the bran and germ of wheat, which is coarser in texture, so giving the batter a chance to rest for about ten minutes gives the wheat and germ a chance to be rehydrated by the liquids.

How to Make Vegan Banana Bread

I love vegan food! I half-jokingly call myself vegan-ish because I often enjoy foods that aren’t vegan. However, I’ve taken a big liking to vegan baking so, on my blog, you’ll find vegan substitutions for almost all baked goods.

For this banana bread recipe, there are 2 not-so-vegan ingredients: an egg and greek yogurt. To turn this into a vegan banana bread recipe, simply replace the egg with 1/4 cup of applesauce and replace the greek yogurt with vegan yogurt.

The applesauce and yogurt will also add the necessary moisture to the whole wheat.


Banana Bread Ingredients

Although we call it bread, this banana dessert isn’t made like one. We start with mashed ripened bananas and then add all of our other ingredients. Bananas are the star of this show!

This time, I choose to use maple syrup instead of sugar. This adds a little extra depth to the flavors. My family loved the change and didn’t even notice!

Ingredients

  • 3 large overripe bananas
  • 1 egg or 1/4 cup applesauce if making vegan version`
  • 1/3 cup plain greek yogurt use plain vegan yogurt if making vegan version
  • 2 tbsp coconut oil melted
  • 1/3 cup brown sugar
  • 1/4 cup maple syrup
  • 1 1/2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon optional
  • 1/4 tsp salt
  • 2 cups Bob's Red Mill Whole wheat flour
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees and prepare loaf pan
  • In a bowl, mash the three bananas with a fork or potato masher. Then add egg, greek yogurt, coconut oil, brown sugar, and maple syrup. Mix until smooth.
  • Add vanilla extract, baking soda, salt, and ground cinnamon. Mix until smooth
  • Add in whole wheat flour and mix until well combined.
  • Add in chocolate chips. I like semi sweet, but milk chocolate works well.
  • Cover and let batter rest for 15 minutes.
  • After 15 minutes, remove from the fridge, uncover, and place the batter in the prepared loaf pan.
  • Bake for 45-55 minutes.
  • Let cool in pan for about 15 minutes, then slice and enjoy!
