Hey y’all! Happy Summer! This season screams spicy chicken tacos with pineapple salsa. It is officially summer and nothing screams summer like tacos, fresh fruit, and family! I absolutely love tacos! Well, honestly, I love Mexican food… all of it! I make at least two Mexican dishes a week and my family has grown to love it as much as I do. Mexican food is a beautiful taste of a beautiful culture that is as rich as the flavors displayed in the food.
Jump to RecipeOne of my favorite dishes is spicy chicken tacos with pineapple salsa. The sweet pineapple balances the heat from the fresh jalapenos while complementing the flavorful chicken. It’s basically a little piece of heaven on a warm tortilla. Yum!
Let’s talk about this chicken! I seasoned the chicken and heated 2 tablespoons of olive oil in a cast-iron skillet. Then I threw the chicken in the skillet and tossed it with the seasoning mix. After a few minutes of stirring, the chicken should be fully covered in seasonings. My trick to not drying out my chicken is chopping the chicken into small pieces and turning the heat off and covering the pan when it is almost fully cooked (7-10 minutes). I squeeze fresh lime juice over the chicken and let it finish cooking in the covered skillet for about 5-10 minutes. This seals in the juice and flavors.
The Pineapple Salsa is a delicious and beautiful gathering of multi-colored bell peppers, Roma tomatoes, cilantro, pineapples, jalapenos, lime juice, and a pinch of salt and pepper. The longer you let these ingredients hang out together, the more the flavors will meld together. I suggest making the pineapple salsa the night before you serve it.
