Hey y’all! Happy Summer! This season screams spicy chicken tacos with pineapple salsa. It is officially summer and nothing screams summer like tacos, fresh fruit, and family! I absolutely love tacos! Well, honestly, I love Mexican food… all of it! I make at least two Mexican dishes a week and my family has grown to love it as much as I do. Mexican food is a beautiful taste of a beautiful culture that is as rich as the flavors displayed in the food.

Chicken Tacos

One of my favorite dishes is spicy chicken tacos with pineapple salsa. The sweet pineapple balances the heat from the fresh jalapenos while complementing the flavorful chicken. It’s basically a little piece of heaven on a warm tortilla. Yum!

Let’s talk about this chicken! I seasoned the chicken and heated 2 tablespoons of olive oil in a cast-iron skillet. Then I threw the chicken in the skillet and tossed it with the seasoning mix. After a few minutes of stirring, the chicken should be fully covered in seasonings. My trick to not drying out my chicken is chopping the chicken into small pieces and turning the heat off and covering the pan when it is almost fully cooked (7-10 minutes). I squeeze fresh lime juice over the chicken and let it finish cooking in the covered skillet for about 5-10 minutes. This seals in the juice and flavors.

Pineapple Salsa

The Pineapple Salsa is a delicious and beautiful gathering of multi-colored bell peppers, Roma tomatoes, cilantro, pineapples, jalapenos, lime juice, and a pinch of salt and pepper. The longer you let these ingredients hang out together, the more the flavors will meld together. I suggest making the pineapple salsa the night before you serve it.

Chicken tacos just aren’t the same without flour tortillas. I use La Banderita tortillas, they’re my favorite. Now let’s get to some beautiful pictures and recipes!

Pineapple Salsa

  • 1 cup pineapple tidbits
  • 1 orange bell pepper
  • 1 green bell pepper
  • 1 cup Roma tomatoes
  • 1/4 cup cup chopped cilantro
  • 1/4 cup red onion
  • 2 juice of limes
  • pinch black pepper
  • 1/2 teaspoon salt
  • 1 diced jalapeños optional

Spicy Chicken Tacos

  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 2 1/2 teaspoons chili powder
  • 1/2 teaspoon cayenne add as much as you'd like, I use about 1 1/2 teaspoons
  • salt to taste

  • Add all pineapple salsa ingredients to bowl. Mix and cover. Then set in refrigerator until time for use. Make sure to do this first. The longer the ingredients hang out, the better the flavors will come together. It's best to do this the night before serving, but you don't have to.
  • Chop chicken into small bite-size pieces. Set aside
  • Mix spices for chicken. Set aside.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Then add chicken and spice mix. Stir until chicken is evenly coated with spices.
  • Stir often to ensure that the chicken doesn't stick to the pan and the chicken pieces don't stick together. Cook chicken for 6-10 minutes.
  • When chicken is just fully cooked, squeeze the juice from half a lime over the chicken, then turn off the heat and cover for 10 minutes.
  • Warm tortillas per directions on the package
  • Assemble tacos. Serve with black beans and rice or your favorite sides.
