The Best Lemon Blueberry Bread Recipe

Lemon blueberry bread is the perfect springtime dessert. Warm bread soft bread with fresh blueberries and lemon covered in a sweet glaze. This sweet bread is one of my favorite dessert bread and I’m so happy to share it with you!

Lately, I have been loving dessert bread! They’re perfect for breakfast, snacktime, desserts, afternoon tea, holiday meals, or when you are having guests over. A sweet bread loaf is good for any time of the day. Fruit is always perfect for sweet bread or dessert loaves. Frozen fruit works fine but fresh fruit is best. But you don’t have to use fruit because there are several types of dessert bread.

How to Make Glaze for Cake

This glaze is literally the icing on the cake. It’s the perfect topping to bring all the flavors together. The glaze is simple and has 4 ingredients; powdered sugar, melted butter, fresh lemon juice, and vanilla extract. The key to a smooth glaze is sifting the powdered sugar before combining it with the other ingredients. If you’d like the glaze a little ticker, then add more powdered sugar. If you’d like it looser, then add more melted butter.

Ingredients

Lemon Blueberry Bread

  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/3 cup unsalted butter melted vegan butter if making vegan version
  • 1 cup sugar I love raw cane sugar
  • 1/2 tsp vanilla extract
  • 2 tsp fresh grated lemon zest
  • 1/2 tbsp fresh lemon juice
  • 1/2 cup milk non-dairy milk if making vegan version
  • 1/2 cup blueberries fresh or frozen
  • 1/2 tbsp flour for dusting blueberries

Lemon Glaze

  • 6 tbsp melted unsalted butter vegan butter for substitution
  • 3 cups powdered sugar sifted
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees and prepare loaf pan
  • Mix flour, salt and baking powder. Set aside.
  • In a seperate bowl mix eggs, sugar, vanilla extract, lemon juice, lemon extract, and melted butter.
  • Alternate between adding dry ingredients and milk to the bowl of wet ingredients. Gently mix ingredients togther. Do not over mix.
  • Toss blueberries in flour. then gently fold into batter.
  • Pour batter into loaf pan. And bake for 30-40 minutes or until you can insert a toothpick and pull it out cleanly.
  • While baking loaf, start making the glaze.
  • First, sift the powdered sugar into a bowl. then add the vanilla extract, lemon juice, and melted butter. Mix well amd set aside.
  • Let the bread cool for 20 minutes, then pour glaze over.
  • ENJOY!
