Preheat oven to 350 degrees Fahrenheit and prepare the loaf or Bundt pan
Combine raw sugar and melted coconut oil, apple cider vinegar, unsweetened applesauce, almond milk, and vanilla extract. Set aside.
Combine spelt flour, cinnamon, nutmeg, cloves, baking powder, baking soda and salt.
Combine both mixtures. Don't over mix.
If you're adding diced apples, fold them into the mixture now.
Pour batter into pan and put into the oven. Bake for 35-45 minutes or until you can insert and remove a toothpick cleanly.
