Easy Vegan Spiced Apple Cake

Ingredients

  • 1 1/2 cups raw sugar
  • 1 cup apple cider vinegar
  • 1/2 cup almond milk or your favorite non-dairy milk
  • 1/4 cup coconut oil melted
  • 1/3 cup unsweetened applesauce
  • 1 1/2 tsp vanilla extract
  • 3 cups Bob's Red Mill Organic Spelt Flour
  • 1 tbsp ground cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp ground cloves
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp sea salt
  • 2 apples, peeled and diced into tiny squares optional
  • chopped pecans for topping optional

Instructions

  • Preheat oven to 350 degrees Fahrenheit and prepare the loaf or Bundt pan
  • Combine raw sugar and melted coconut oil, apple cider vinegar, unsweetened applesauce, almond milk, and vanilla extract. Set aside.
  • Combine spelt flour, cinnamon, nutmeg, cloves, baking powder, baking soda and salt.
  • Combine both mixtures. Don't over mix.
  • If you're adding diced apples, fold them into the mixture now.
  • Pour batter into pan and put into the oven. Bake for 35-45 minutes or until you can insert and remove a toothpick cleanly.
  • Once fully cooked, removed from pan, and cooled, topped with caramel and pecans,
