The Best Immune Boosting Soup

  • 2 tbsp olive oil
  • 3 carrots
  • 3 celery stalks
  • 1 small white onion
  • 2 tsps minced garlic
  • 1 tbsp oregano fresh is preferred but dried is fine
  • 1 tsp thyme fresh is preferred but dried is fine
  • 1 tsp basil fresh is preferred but dried is fine
  • 1 tsp pepper
  • 1 tsp cayenne pepper optional
  • 2 tsp salt
  • 8 cups chicken broth (64 ozs) use veggie broth if making vegan or vegetarian version
  • 2 bay leaves fresh is preferred but dried is fine
  • 1 can chickpeas or white beans
  • 2 cups diced cooked chicken
  • 2 cups diced kale
  • 1 cup diced broccoli


  • Dice 1 small white onion, 3 stalks of celery, and 3 carrots. Add 2 tablespoons of olive to a hard-bottomed pot over medium heat. Then add onion, carrots, and celery. Cook until veggies are soft (about 5 minutes.)
  • Turn heat down to medium-low. Add 2 tablespoons of minced garlic, 1 tablespoon of oregano, 1 teaspoon of thyme, 1 teaspoon of basil, 1 teaspoon of cayenne pepper (optional, salt, and pepper. Stir well. Cook for about 2 minutes or until fragrant.
  • Add 8 cups of chicken or veggie broth to the pot. Stir well. Then add 2 bay leaves.
  • Add 1 can of chickpeas or white beans. Raise heat and bring the pot to a boil. Then cover, lower heat to low, and let simmer for 30 minutes.
  • Add in 2 cups of diced cooked chicken, 2 cups of diced raw kale, and 1 cup of diced broccoli. Cook for another 5 minutes.
  • Serve with crackers. Enjoy!
